About Purple Oxalis Triangularis

Also known as purple shamrock, Purple Oxalis is an edible plant related to sorrel. It is packed with naturally-occurring oxalic acid, which gives the plant's leaves and stems an intensely sour taste, reminiscent of the skin of a grape or a green apple. Crushing the stems and leaves between your fingers produces a deep purple stain, similar to that of beet juice.

Get creative with these leaves:

  • Tear them atop rich creams and cheeses, as well as fatty meats. Our chefs find these leaves to be an exquisite pairing to foie gras.
  • Use where you might want a sour grape, plum, or apple flavor, such as a peanut butter or fruit dessert.
  • Garnish a cocktail with a floating clover.
